Tofu is eaten all over Asia. It had a bad reputation in the West due to people not cooking it properly. In Asia it’s a staple source of protein, and delicious when prepared right. Made from soy beans that are ground and then pressed. It has an egg like texture, and picks up any flavours you cook it in. Seitan has been eaten in Asia for thousands of years amongst the Buddhist monk communities as a source of protein in their meat-free diet. We make all our seitan in-house with organic vital wheat flour. For those who crave meat, it’s the closest thing in texture and appearance.
